I should have posted last night, but I was too tired. Fridays often sneak up on me that way.
Remember Thursday’s job interview? I was supposed to hear something yesterday. I was a restless bundle of nerves all day yesterday. I couldn’t read. I cleaned house. My room is now fairly neat. I cleaned the kitchen, vacuumed the family room, changed Michael’s sheets, even made a loaf of banana bread with walnuts. Call me Betty Crocker.
I didn’t hear about the job. I am assuming, then, that I didn’t get it. Oh well.
I have not been blogging much about what’s in my head right now because it’s a maelstrom of confusion. I don’t know whether I should really try to give the freelance writing a shot, or just fall back into being a paralegal or doing some kind of law office job. One represents risk and excitement, the other represents safety. I guess being laid off has a benefit, in that it’s making me examine these things far more.
Financially, we are not doing much of anything extra these days, except for the occasional Wendy’s burger or $5 movie ticket. There probably won’t be any sort of vacation this spring, unless I can borrow someone’s vacation place for a week. I am not bothered by that. Money has never been a big concern of mine, as long as I can pay my bills. I don’t like dipping into savings, though.
I wish I could post photos of the kids, but they are both hiding or making faces every time I pull out the camera these days. Teenagers.
My mother has a recipe that is wonderful for cold, yucky days, so I am showing it here. Great comfort food.
BAKED POTATO SOUP
4 large baked potatoes
1 ½ sticks butter
2/3 cups flour
6 cups milk
1 tsp salt
garlic powder, onion powder, and white pepper to taste
1 cup grated cheddar cheese
1 eight oz carton sour cream
a bowl of thinly sliced scallions or green onions
Cooking Instructions:
Bake potatoes at 400 for 60 mins or until soft.
Cool, peel and chop baked potatoes into rough cubes.
Set aside.
In a large, heavy saucepan melt butter.
Stir flour into butter, cook, stirring 1 minute
Add milk, salt and garlic powder, onion powder, and white pepper if desired.
Add potatoes
Just before serving, stir in grated cheddar cheese, and sour cream.
Heat to serving temperature, but don't boil.(will burn so be careful )
Pass a bowl of thinly sliced scallions plus green part, to garnish.

Note: can add finely chopped ham along with the potatoes if desired

Grandma's Boyfriend
A 5-year-old boy went to visit his grandmother one day. Playing with his toys in her bedroom while grandma was dusting, he looked up and said, 'Grandma, how come you don't have a boyfriend now that Grandpa went to heaven?'
Grandma replied, 'Honey, my TV is my boyfriend.. I can sit in my bedroom and watch it all day long. The religious programs make me feel good and the comedies make me laugh. I'm happy with my TV as my boyfriend.'
Grandma turned on the TV, and the reception was terrible. She started adjusting the knobs, trying to get the picture in focus.. Frustrated, she started hitting the backside of the TV hoping to fix the problem.
The little boy heard the doorbell ring, so he hurried to open the door and there stood Grandma's minister. The minister said, 'Hello son, is your Grandma home?'
The little boy replied, 'Yeah, she's in the bedroom bangin' her boyfriend.'
The minister fainted..
