It never ceases to amaze me what my son will and will not eat. I bought him some snack bars [several different kinds] and trail mix, to take to school for snacks, since he won't eat lunch.
I have offered to make him a sandwich every day and he says he won't carry it, too much trouble.
He saw the snack foods all sitting on the kitchen counter yesterday when I got home from work, and I explained that I want him to take it to school. He looked at the first box. "I will eat that tomorrow."
He pointed at the trail mix. "I will eat that for lunch the next day."
He looked at some chocolate covered pretzels. "I will eat those for lunch Friday."
"No, those are to keep at home for a snack."
He says the school food is awful and he won't eat it. But a rice krispies bar makes a great lunch. Grr.... At least he eats a big snack when he gets home around 3:30.
I made meatballs last night and accidentally dumped too much garlic powder in the meat. They were delicious. I made cauliflower and tried roasting it in the oven and it was nearly raw. Oops. So I threw it in the microwave with some cheese and mayo and it came out pretty well. Michael said he likes it crunchy.
Sometimes there are happy accidents in the kitchen. Usually they involve me being in a hurry and not realizing the condiment is on "pour" instead of "shake."
I read a lovely cooking blog called The South in My Mouth and she had a recipe the other day for Tuna Noodle Casserole. I read it and had to make it. So that's what we had for dinner Monday night. SO yummy. I added some lime juice and used chopped green peppers instead of pimentos, since we harvested some from our gardens.
Michael loved it. He also covered his enormous portions of it with cayenne pepper. Then he complained it was too hot in the house. LOL
We're getting some hurricane rain but not a lot. I'm praying for those people in the storm's path.
