It just occurred to me I haven't blogged today. It's been crazed. Tomorrow I have a lot of work to do - yay! But I also have a bunch of errands.
The high tomorrow is going to be 84. In APRIL! Even for Hot-Lanta that's bizarre.
We got the HVAC system downstairs fixed today, praise God. We have no money, but we will be cool while we eat our Spam...
Of course, we were glued to the TV late yesterday, like everyone else, mesmerized with horror at the events in Boston. I thought I would link to a story about the bombing but then, everyone probably needs a break from the news coverage.
I much prefer to read about Sex, murder and conspiracy sheds new light on Edward-VIII book. Sounds like a great movie plot doesn't it?!
Or how about Florida battles slimy invasion by giant snails? "In some Caribbean countries, such as Barbados, which are overrun with the creatures, the snails' shells blow out tires on the highway and turn into hurling projectiles from lawnmower blades, while their slime and excrement coat walls and pavement."
I thought the flying roaches, seniors driving like zombies, and cities where no-one speaks English made Florida a not great place to visit, but now there are snails. MMmm-kay...
I am trying to eat more healthy.Anyone got any good recipes for giant snails?? Non?
Tonight my plan was to chop up an avocado and add it to my mushroom beef broth and meatball soup. The avocado was like trying to peel a football. Not a happy situation. I finally gave up. I had some grapes for dessert. I'd had borscht at lunch - lots of cabbage and beets there, so I got in some veggies.
I made the borscht last week and it turned out very tasty.
Dee's Borscht
2 cans shredded beets
1 can diced potatoes
1 package stew beef
1 red onion, diced
1 bag coleslaw cabbage
juice of 1 lemon
1 or 2 boxes of beef broth
2 tablespoons soy sauce
1 tsp. carraway seeds
Salt and pepper to taste
Saute the onions until soft, and brown the stew beef in a skillet. Throw in crock pot with all other ingredients. Cook on low for 6-9 hours. Serve with a dollop of sour cream.
