Michael has been bugging me for a while to make him some Hot Wings. I told him the other day to go get me some chicken wings and I would make him some. He came back with frozen wings.
Of course, at 5:00 today we are working on homework and he says "We going to have hot wings tonight?"
Hmm.... let's review basic thawing, shall we?!
He said in cooking class they were told the best way to thaw frozen food is in the fridge. Well..... yes. But there are shortcuts. These are important.
So I got out the bag of chicken wings and held each frozen piece under warm water for a minute.
Next, I patted them dry with a paper towel.
Then I put them in the bottom of a lasagna pan and salted them well.
Michael was sitting there looking up hot wings recipes on the internet. Simuntaneously, he was complaining about how tough and dry they often are - which I know. It's rare to find good ones.Three Dollar Cafe seems to have good ones.
I used to make hot wings for my dad sometimes. So did Mom. He was always appreciative, but he always said the same thing: NOT HOT ENOUGH.
One time, when Mom and Dad still lived in Knoxville, I was there on Saturday afternoon when they got back from the grocery store. Mom had bought a package of wings. I told Dad I would fix him some Hot Wings.
I must have used a TON of cayenne pepper and tabasco sauce, plus salt and pepper. Nothing fancy. I was going for the burn.
Dad took one bite and said "These are good, but they aren't hot enough."
As he was saying it, he was literally mopping sweat from his face!
"Would you hand me a glass of ice water, Baby?!" he said, with some exertion. LOL
So for Michael's wings I wanted them to be flavorful, but not too too hot because I am eating them too. [Mother is eating a sandwich] So I put two cans of Rotel [mild] in a bowl and added a shot of Sriracha [Asian chili sauce], a lot of onion powder, garlic powder, the juice of a lime, sea salt, and about a tablespoonful of sugar. I blended everything with an immersion blender.
We covered the wings in sauce, sealed the pan with foil, and put them in a 300 degree oven. I think they will be messy to eat but tasty. We shall see.

Coco was better over the weekend, but this morning she wouldn't eat. She wouldn't even touch a poached egg I made for her. Yikes. Bad sign. I was so worried.
I had to go to the doctor for a followup - and everything is fine, YAY! - and do a couple of errands. When I came home, Coco was still lethergic. Scary.
When Michael came home he tried to coax her to eat. She wouldn't at first, but eventually ate some yogurt.
We found out she prefers strawberry over peach, even though we leave out the fruit. Plus, I boiled some chicken and gave her a few bites. So far [knock wood] she has kept that down. Pancreatitis in dogs is pretty serious.
Hopefully she can get through this and be OK...
