All my life, we have bought limes when we bought weekly groceries. My parents liked to drink vodka tonics or gin and tonics, and lime juice really completes those drinks.
Or so I'm told. I don't drink.
I was thinking today, as I made tuna salad, limes are AWESOME. You can take any sort of canned tuna or canned salmon or clams, drench those little fishies with some fresh lime juice, and the flavor immediately brightens. When I was a kid and we moved to Knoxville, canned seafood had to suffice, because in the early 1970's there was no fresh seafood in town -- not for middle class suburbanites, anyway.
My mom developed a recipe for seafood casserole that everyone loved. I remember spaghetti and canned crabmeat, possibly artichoke hearts, but little else, except that it was really tasty. It was one of the very few dishes called "casseroles" that my father would willingly eat. Normally he turned up his nose at casseroles, much to Mom's annoyance.
I made salmon for dinner. I took two nice salmon filets and baked them with some pats of butter, fresh lime juice, and fresh dill. Very delicious, and soft enough for an 85 year old to chew easily. My son refused to eat the salmon. He had leftover pork roast, rice, and fresh asparagus.
I asked him to taste my salmon, and he shrugged. "I make grilled salmon all the time at work. I know how to tell if it's rare, medium or well-done." I tried not to be annoyed. "When we get our new grill [the old one died and will be going away soon] I'm going to grill me some salmon."
"Okay, but Granny will have to stick with my salmon," I replied.
He loves sushi.
I won't touch sushi -- although I did suggest once that my brother buy some grocery store sushi and left me throw it in a skillet and cook it. He looked like he was going to hit me.
Lime juice brightened up the salmon.
I also added it to some melted butter and poured it over the asparagus.
Lime is a key ingredient in my mother's salad dressing and fruit salad. I just realized I have written about limes before, in a blog called Lime Love, from 2012. It contains the fruit salad recipe.
It's bad to be senile at 56.
